Coconut Curry Roasted Brussel Sprouts

With the release of our Coconut Curry Sauce, I wanted to give you a recipe you can enjoy. This is one of my favorite ways I enjoy the Coconut Sauce.

Preparation time: 10 minutes

Cooking time: 20-25 minutes

Total time: 30-35 minutes

Serves: 4

Ingredients:

  • 1 pound Brussels sprouts, trimmed and halved

  • 2 tablespoons olive oil

  • 3/4 Cup of Coconut Curry Sauce

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon garlic powder

Instructions:

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, combine the Brussels sprouts, olive oil, salt, black pepper, and garlic powder.

  3. Toss the ingredients together until the Brussels sprouts are evenly coated with the seasoning.

  4. Arrange the Brussels sprouts in a single layer on a baking sheet lined with parchment paper.

  5. Roast the Brussels sprouts in the preheated oven for 20-25 minutes, or until they are tender and golden brown, stirring once or twice during cooking.

  6. Remove the baking sheet from the oven and allow the Brussels sprouts to cool for a few minutes.

  7. Transfer the Brussels sprouts to a serving dish, add the coconut curry sauce, and serve hot as a side dish or snack.

Enjoy the delicious flavors and textures of these roasted Brussels sprouts, a perfect vegan-friendly addition to your meal!

What is the most important factor behind your success/the success of your brand?

Recently we were interviewed by Shoutout magazine. Shoutout magazine wanted to know what we thought was the most important factor behind our brand’s success. This was our answer.:

Green Love Kitchen is a family-owned business in the underserved community of Lithonia, Ga. Our mission, for the past 7 years have been to provide the best customer experience possible. We focus on serving great tasting, vegan and vegetarian-friendly foods, at an affordable price. Green Love Kitchen strongly believes that the only way we can make a profit in business, is by making a difference in communities that struggle with health-related disparities the most. These communities are called food desserts and we are on a mission to eradicate them. We hire locally and when we can, source locally. Sticking to our mission has been the most important factor behind the success of Green Love Kitchen. Since inception we have sold over 50,000 raw Kale Wraps and Salads, collaborated with black-owned farmers and vendors, and provided employment for more than 50 individuals from our community. Further, being a micro-business in a hyperlocal market affords us the ability to adapt on the fly. The 2020 pandemic was a true test for Green Love Kitchen as we were forced to layoff our staff and close our doors as we sheltered in place. Not knowing what the future of Green Love Kitchen (and the restaurant industry all together) would be, we made some necessary shifts. We took out all of our dining tables and chairs, changed our hours of operation, and began offering online delivery and takeout options. Our customers have been super supportive!!! They, like us, understands the importance of eating healthy especially when options are limited. Our mission, because it focuses on our customer experience, through and through, gives us a serious leverage in business. In closing we would like to thank Shoutout magazine for this feature. May we all be grateful for life and fulfill our mission and purpose while we still have the opportunity, because tomorrow may not be an option.

2020 and Beyond

As I write this email, Green Love Kitchen has been closed going on for 2 months. Every fiber of my being wants to believe that the future has to be a little better than right now. That somehow we can smudge away the events of the first part of this year and enter into Anu. And as we set to open two days from now, Green Love is unsure how we will be received by the community. We, like many other small businesses, were ill-prepared for the COVID-19 Pandemic and the perfect storm it brought along with it. Everything that was normal became trivial. From shopping at the store to going to the park; we all were suddenly jolted into survival mode. Schools shut down and suddenly all of our children were home and full of energy. Rumors on top of rumors were spreading and you couldn’t know what was fact from fiction. So we acted accordingly and took our last customers on April 6, 2020.

We honestly did not think we would be closed this long, however, the situation kept escalating. As a family, we took advantage of the time. Business for us was not the priority. Traveling was out the picture, so like everyone else, we “sheltered in place”. Two months later and still no end in sight to the madness, we must acquiesce-this is the new normal. Yes, when you go out, wearing a mask and glove, are the proper attire (anything else is uncivilized). And no, you can’t go to a Jazz concert (unless it’s on Zoom). Truthfully speaking, I am not a fan of graduations or birthdays online. Green Love Kitchen is known not just for the wonderful tasting food, but the human connections, and intimate experiences.

What does the future hold? We in the holistic healing community rely heavily on the simple truths of life. The most fundamental being, “let food be thy medicine”. As we adjust and adopt may we never forget this simple truth. The future has the potential to be anything we choose. The two things we cannot control, the spread of the virus and racism, we must not give energy to. Collectively may we look to a future a little brighter than today. May the ones who did not make it this day, watch over us as we try to pick up where you left. And may the Green Love Kitchen community continue to show us support in the safest way possible.
